Surprisingly, ghetto meatloaf is actually pretty damn good:
1 lb ground beef
2 packets instant oatmeal \ 1 cup rolled oats
1/2 cup eggs in a carton (I like these because you can use continuous quantities of egg, and I haven't yet had it spoil on me in the 4 months I've been using this carton)
1/2 cup ketchup
1/4 cup dried onion flakes.
1/8 cup dried parsley flakes.
1 tsp of thyme
pinch of rosemary
pinch of cumin (opt. I just put cumin in everything)
salt to taste (I used around 1tbsp, but I like salt)
Preheat oven to 350F
Grind all of the spices if you can and/or care.
Mix everything. Stick it in a loaf pan if you have one. If you don't, metal cups or a small pot also work. Cook for about half an hour. If by that time, it looks solid on the top, pour hot sauce over it to make a crust. Cook for another 15 minutes or so, and you're done!
This makes enough to look like it'll feed me for about 5 days. It would be a little cheaper if I'd had oats instead of the oatmeal, but other than that the only thing with significant cost is the meat. I dub this a good grad student recipe.
