Kjottkaker (Norwegian meatballs)
Ingredients
3/4 lb Ground beef
2 medium Shallots finely chopped
1 pinch Ginger (powdered)
1 large Egg
1 teaspoon Salt to taste
2 tablespoons Bisquick
1 teaspoon Pepper to taste (I added a bit more as they were cooking)
1 tablespoon Water as required
Dash Rosemary (optional)
Place the meat in a large mixing bowl and add the salt, pepper, and ginger before mixing well.
Finely chop shallots and add to the bowl, knead well to combine the ingredients.
Crack an egg into a glass and whisk well before adding to the meat, again knead well to combine.
Sprinkle some Bisquick over the meat and work it well into the mixture. If the consistency is not loose enough add water, a little at a time, always mixing well. If the mix is too loose, add a little more Bisquick.
Fashion into small patties, lightly coat with Bisquick, and pan-fry in a smidge of olive oil, salt, pepper, and rosemary.

They came out very soft yet they held together fine. Next time, I'll probably add more pepper and salt in the meatballs instead of putting so much in at the cooking phase, but overall these were very yummy.
